Ingredients:

  • 30 small corn tortillas
  • 6 cans (15 ounces each) black beans, drained and rinsed
  • 3 tablespoons olive oil
  • 3 onions, chopped
  • 6 garlic cloves, minced
  • 6 bell peppers, chopped
  • 6 tablespoons chili powder
  • 3 tablespoons ground cumin
  • 3 tablespoons smoked paprika
  • Salt and pepper, to taste
  • 3 cups corn kernels (fresh, frozen, or canned)
  • 3 cups salsa
  • 3 cups vegan cheese shreds
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving


Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the onions and cook until softened, about 5 minutes.
  3. Add the garlic, bell peppers, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes.
  4. Stir in the black beans, corn, and salsa. Cook for an additional 5 minutes.
  5. Spoon the bean mixture into the corn tortillas and place them in a single layer in two large baking dishes.
  6. Sprinkle the vegan cheese shreds over the filled tortillas.
  7. Cover the baking dishes with foil and bake for 20 minutes, or until the cheese is melted and bubbly.
  8. Remove the foil and bake for an additional 5 minutes, or until the cheese is lightly browned.
  9. Serve the tacos hot, garnished with fresh cilantro and lime wedges.
